Mole Poblano with Doña María Sauce

INGREDIENTS
- 2 boneless chicken breasts
- 1/2 medium onion
- 2 garlic cloves, minced
- 2 tsp salt
- 1 jar DOÑA MARIA® Mole Original (8.25 oz)
- 1 - 1/2 cup of chicken broth
- 1/8 tsp ground cumin
- 4 tbs of creamy peanut butter
- 2 tbs corn oil
- 2 cups of white rice
- 1/4 tsp ground cinnamon
Preparation
- Steam your white rice before getting started.
- In a large skillet, cook chicken, chopped onions, and garlic for 10 to 12 minutes or until chicken is cooked through and onions are soft.
- In a large bowl, combine chicken broth and mole sauce. Add in peanut butter, cumin, ground cinnamon and stir until fully combined.
- Cover chicken with mole mixture, bring to a boil, reduce heat to medium-low and simmer 15 minutes.
- Serve over rice.
